• 2 medium-sized zucchini (Zucchini Squash)
• 1/2 cup grated Parmesan cheese
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• Salt and pepper to taste
• Fresh basil leaves for garnish (optional)
Preheat your oven to 350°F (175°C).
Wash the zucchini and cut them into thin slices, about
1/4 inch thick.
In a mixing bowl, combine the sliced zucchini, minced
garlic, olive oil, and a pinch of salt and pepper. Toss
everything together to coat the zucchini slices evenly.
Arrange the zucchini slices in a single layer in a baking
dish.
Sprinkle the grated Parmesan cheese evenly over the
zucchini.
Bake in the preheated oven for about 20-25 minutes, or
until the zucchini is tender and the cheese is golden
brown and bubbly.
Remove from the oven, garnish with fresh basil leaves if
desired, and serve hot.
• 2 medium Zucchini Squash, thinly sliced
• 1 cup shredded cheese (cheddar, mozzarella, or your choice)
• 4 whole wheat or corn tortillas
• 1 tablespoon olive oil
• Salt and pepper to taste
• Salsa and sour cream for dipping (optional)
Heat olive oil in a skillet over medium-high heat.
Add the thinly sliced zucchini to the skillet and sauté for 3-4
minutes until they become tender and slightly browned.
Season with salt and pepper.
Remove the zucchini from the skillet and set them aside.
Place one tortilla in the skillet and sprinkle half of the shred
ded cheese on it.
Add half of the sautéed zucchini on top of the cheese.
Place another tortilla on top to create a quesadilla.
Cook for 2-3 minutes on each side, or until the tortilla is
crispy and the cheese is melted.
Repeat the process with the remaining tortillas, cheese, and
zucchini.
Slice the quesadillas into wedges and serve with salsa and
sour cream if desired.
