• 2 yellow squash, thinly sliced.
• 2 tablespoons of olive oil.
• 2 cloves of garlic, finely chopped.
• 1 teaspoon of fresh or dried thyme (or your choice of herbs like basil or rosemary).
• Salt and pepper to taste.
• Grated Parmesan cheese (optional, for garnish).
Wash and thinly slice the yellow squash. You can leave
the skin on if you prefer, as it’s edible and adds color
and texture. In a large skillet, heat 2 tablespoons of olive
oil over medium heat. Add the chopped garlic cloves and
sauté for about 30 seconds until fragrant. Add the yellow
squash slices to the skillet and mix well with the garlic.
Sprinkle thyme (or your choice of herbs) over the
squash. Season with salt and pepper to taste. Sauté the
yellow squash for about 5-7 minutes, stirring
occasionally, until tender but still slightly firm.
Once cooked, remove the yellow squash from the heat
and serve it hot.If desired, sprinkle grated Parmesan
cheese on top of the yellow squash before serving.
